Honey Dijon Chicken

Tis one of my newest favorite recipes. I love making this one since it’s so simple and doesn’t require much in terms of ingredients. We made this for dinner one night while hanging out during spring break and it was pretty amazing. *-* It goes especially well with mashed potatoes (another mashed potatoes recipe coming up soon!)

There have been many variations of this made since then. I kinda change up the proportions each time because I don’t feel like measuring it out, but it’s been working out pretty well. :] I included rough proportions just for reference.

Honey Dijon Chicken

-chicken, cut into pieces
-2 tbsp lemon juice
-2 tbsp soy sauce
-1 tsp Dijon mustard

1) Place chicken in an ungreased baking dish. Combine remaining ingredients and pour over chicken.
2) Bake, uncovered, at 350 F for ~25 minutes or until juices run clear.
