Vegan Oatmeal Craisin Cookies

This missed the mark of being a <5-ingredient recipe by just one. Nevertheless, it is also super fast and pretty effing delicious. Recipe was taken and adapted from blogilates! I still have coconut oil left from when we made paleo awesomeness for one of my neighbor’s birthdays, so I’ve been finding reasons to use it. It’s gotten kinda cold lately though, so it went back to being solid, so I threw the mixture in the microwave for ~15 seconds so it’d be easier to mix everything around. This is another one of those ridiculously quick and simple recipes, which you know I adore. Also no sugar added (although you could if you wanted to)! :]

Vegan Oatmeal Craisin Cookies

Ingredients:
-3/4 cup dry oats
-1/4 tsp baking powder
-1/8 tsp salt
-2 tbsp dried cranberries
-1 tbsp coconut oil
-2 tbsp vanilla soymilk

Instructions:
1) Preheat oven to 350 F. Mix all the ingredients together with your hands, mold into balls, then press into cookies, and place in oven for about 15-20 minutes.
