Curried Tuna Melt Panini

On our case opening for polyuria this morning, someone asked, “What color is the discharge?”

…sigh.

The original recipe called for avocado, which I didn’t have on hand, so I subbed some guacamole for it (the kind I had is 95% avocado anyway). I got a whole ton of whole wheat white house rolls (I’m assuming they serve such things there…?) for something like a dollar the other day, so hooray, sandwiches!

Curried Tuna Melt Panini

Ingredients:
-1 can tuna
-3 heaping tbsp hummus
-guacamole
-1//2 cup red bell pepper, diced
-2 tbsp Greek yogurt (I used 0% Fage)
-curry powder
-cayenne pepper
-slices of pepperjack cheese
-whole wheat bread (I got a bunch of whole wheat white house rolls for about a dollar, so I used those)

Instructions:
1) Place all ingredients in a bowl and mix until well combined.
2) Scoop onto bread, top with half a slice of cheese and stick it onto the Foreman grill.
3) Heat until cheese is melted and bread is golden brown.
