Curried Carrots

One of the things I made for our potluck towards the end of April! The picture is terrible because I forgot to take one until after most of it had already been eaten. :/ My apologies. But people really liked it, and it’s a super simple recipe!

Curried Carrots

Ingredients:
-5 carrots, peeled + cut into 1/4 inch pieces
-a little over 1/2 cup water
-2 tsp curry powder
-1 dash ground ginger
-small pat of Earth Balance (or butter)
-dash of sea salt
-squeeze of honey

Instructions:
1) Simmer everything in a covered pot for ~15 minutes.
