Pumpkin Spice Muffins
We had a bunch of pumpkin pie filling left over, so we decided to make something out of it. (Waste not!) We were also trying to use up the rest of my friend’s baking supplies since she needed to move and didn’t want to have to take so much stuff with her.
This recipe was adapted from allrecipes. Didn’t make the frosting, but I may try making that to put on something else one of these days. :O
Pumpkin Spice Muffins
Ingredients:
-2 1/4 cups all-purpose flour
-1/2 tsp salt
-1 tbsp baking powder
-1/2 tsp baking soda
-1/2 cup butter (1 stick), softened
-1/2 cup white sugar
-1/3 cup brown sugar
-2 eggs, room temperature
-3/4 cup Swiss Miss with warm water (hot cocoa!)
-2 cups pumpkin pie filling
Instructions:
1) Preheat oven to 350 degrees. Line muffin tins.
2)Â Sift together flour, salt, baking powder and baking soda.
3) In a separate bowl, beat butter, white sugar + brown sugar together until light and fluffy. The mixture should be noticeably lighter in color. Add eggs in oneat a time and allow it to blend before adding the next one. Stir in cocoa mixture + pumpkin pie filling, then stir in flour mixture and mix until just incorporated.
4) Pour batter into muffin cups and bake for ~25 minutes or until it passes the toothpick test.
