Tarragon Chicken Salad
I’m usually too cheap to buy fresh herbs, but when they go for 99 cents for a giant pack (hooray for manager’s specials!), I’m all over it! My latest finds include a giant pack of basil and a giant pack of tarragon for 99 cents each…and an entire rotisserie chicken for $2.26. I am not exaggerating. It was awesome. :O
If you happen to be wondering why I’m always using wasabi mayo when anything calls for mayo, it’s because that’s the only mayo I have.
Tarragon Chicken Salad
Ingredients:
-chicken, shredded (I used some from a can)
-1 handful of dried cranberries
-2 handfuls of grapes
-1.5 stalks celery, diced
-1-2 tsp fresh tarragon, minced
-wasabi mayo
Instructions:
1) Mix everything together!
