Spelt Oatmeal Raisin Cookies

I kinda copied the recipe incorrectly on this one too, so this was an experiment of sorts! It turned out well though and was pretty well-received. Keep in mind though that I took out most of the sugar, so if you’re a fan of sweeter things, you’ll probably want to add it back. This was Part II of my desserts for the fundraiser! I think if I could do it over, we should have had milk and coffee for people. :O We unfortunately didn’t think of that until the event had already started though. Oh well, you live and learn! I think the people who came had a good time. :]

We’ll be doing a soup one (Souperbowl!) in early-ish February though, and I’m hoping to do a main-dish/savory one somewhere later on during the year. :D Food fundraisers are pretty much my favorite types of fundraisers. It’s a win for everyone!

Anyway, the recipe was adapted from here. I was originally going to sub the shortening with coconut oil, but I decided to try leaving them out. I also forgot to bring eggs with me, so I uh, left those out too. The result is a cookie with a more cake-like consistency. They were really good (especially when warm)!

Spelt Oatmeal Raisin Cookies

57 calories, 9g CHO’s, 0g fat, 2g protein, 2g fiber, 16mg sodium!

-3 cups spelt flour
-1 1/2 cups 1 minute oats
-3 bananas, mashed
-3/4 cup applesauce
-1/2 cup raisins
-2 tbsp maple syrup
-1/4 tsp sea salt
-1 tsp baking soda
-1 tbsp cinnamon
-1/2 cup vanilla almond milk, unsweetened
-4 tsp light brown sugar

1) Preheat oven to 350.
2) Mix spelt flour, salt, cinnamon + baking soda together in a bowl.
3) Mix banana, brown sugar, applesauce, almond milk + maple syrup together in a separate bowl. Add to flour mixture and stir to combine.
4) Fold in oats + raisins. Drop tablespoonfuls of batter onto a baking sheet.
5) Bake cookies until edges are light brown (~12 minutes). Cool completely.
