Coconut Acai Bowl

I had something like this back in October while I was in San Diego and have been wanting to recreate it ever since. When I went home over break, I managed to locate acai smoothie packs at the local Sprouts (I am in love with that store; I think I’ve become a total hipster in terms of food. sigh.), so I got creative with whatever we already had at home. This was my first attempt and I probably added way too much coconut water (it’s so expensive outside of Asian markets ;_; ). I believe this shall improve with time though! :O

Coconut Acai Bowl

Ingredients:
-1 Sambazon unsweetened acai smoothie pack
-1/2 can coconut water with pulp
-2 handfuls frozen berries
-fresh blackberries
-almonds
-1 clementine, peeled
-1/4 cup Dorset “Berries & Cherries” muesli

Instructions:
1) Run smoothie pack under warm water for ~5 seconds. Blend it with frozen berries + coconut water in food processor/magic bullet.
2) Pour into bowl and top with fresh blackberries, almonds, clementines + muesli.

    • I hope you like it! I adore coconut and my mom recently sent me a care package with more smoothie packs (yay! :D!) so I’m definitely going to be experimenting with making more acai bowls soon! :]
