蛋塔 (Egg Tarts) v.2

We made these with a puff pastry crust (cheated and bought that at the store) and also with a homemade crust. Most Chinese bakeries use the puffy crust now, but I kinda prefer the non-flakey one more sometimes. The picture shown uses the puff pastry crust, which is why it’s so pretty. I’m sorry that the overall picture looks all over-exposed. It was dark, so no natural light + camera phone = not the best quality. (This recipe makes ~12 egg tarts.)

蛋塔 (Egg Tarts) v.2

Ingredients:
(Dough)
-1/4 cup confectioner’s sugar
-3/4 cup all-purpose flour
-6-8 tbsp Earth Balance
-1/2 egg, beaten
-1 small dash vanilla extract
-little bit of vanilla soy milk to incorporate dough
(Filling)
-1/3 cup white sugar
-3/4 cup water
-4 1/2 beaten eggs
-1 dash vanilla
-1/2 cup evaporated milk

Instructions:
1) Preheat oven to 380-385 degrees.
2) (Dough) Mix the confectioner sugar + all-purpose flour together, then add Earth Balance (or butter), 1/2 egg, vanilla extract and milk.
3) (Filling) Mix all the filling ingredients together in a separate bowl.
4) Press the dough into muffin tins and pour in the filling.
5) Bake for 20 minutes, then turn off oven and keep the egg tarts in there until the egg sets (lessens the deflation!)

birthday weekend

My friend texted me late Saturday night to ask if I could come out to a going-away picnic that we were throwing for one of our friends, since she’s going back to DC soon (she’s a second year, so she’s taking her boards back there). Since I’m not exactly one to miss out on fooding awesomeness and the like, I of course answered, “Sure!”

Well, it was a lie.

The “going away party” was actually for my birthday. :O It’s a reallyyy good thing that I didn’t end up texting the girl in question about it, because she wasn’t there. :x

I have awesome friends. <3

They decorated my seat too!

I sent a picture of me with all of the food above to my brother, and my mom happened to see it, so she sent me a text to tell me that I looked like I’d gotten fatter, so I should stop eating so much. Thanks, mom! I feel the love. :O

Mushroom Fettucine

Recipe adapted from here. This was another dish from our latest potluck. :D

Mushroom Fettucine

Ingredients:
-8 oz. dried fettuccine or linguine
-3 cups fresh shiitake or crimini mushrooms, sliced
-1/2 cup onion, chopped
-3 cloves garlic, minced
-1 tbsp EVOO
-1/3 cup mushroom broth or vegetable broth
-1/4 cup half-and-half or light cream
-1/4 tsp salt
-1 cup plum tomatoes, chopped
-1 tbsp fresh basil, finely shredded
-1 tbsp fresh oregano, finely shredded
-1/4 cup pine nuts, toasted (optional)
-Parmesan cheese, to taste (optional)

Instructions:
1) Cook fettuccine or linguine according to package directions. Drain, then return pasta to saucepan; cover and keep warm.
2) In a large skillet, cook mushrooms, onions and garlic in hot oil over medium-high heat for 4 to 5 minutes or until most of the liquid is evaporated. Stir in broth, half-and-half, salt, and black pepper. Bring to boiling. Boil gently, uncovered, for 4 to 5 minutes or until mixture is slightly thickened. Stir in tomatoes, basil, and oregano; heat through.
3) Spoon the mushroom mixture over pasta mixture; toss gently to coat. Sprinkle with pine nuts and, if desired, Parmesan cheese. Serve immediately.

chocolate festival 2013

I am so, so happy that my diet starts on Monday.

It meant that I was allowed to partake in the annual chocolate festival in Lewisburg! :] (This is basically a picture post. Breath of fresh air from my walls-of-text post?)

I bought 5 tickets at the city hall. Moderation is key. :x MAKE EM’ COUNT!

While we were standing in line and waiting for 11 a.m. to roll by so we could start up our chocolate-induced comas, we mapped out a battle plan on places where we wanted to go. (There were 34 different tasting stations and many of them had several choices.)

We did a lot of camwhoring since it was a nice day and we were actually doing something other than school.

I also got a chocolate-covered Strawberry Smoothie (not pictured). I ended up getting…8 things because we came across a friend who’d pre-ordered a bunch but was all chocolated-out, so he gave us all his tickets (thanks, Marshall!).

Weirdly enough, I’ve never actually been to church for Easter Sunday (since we go on Saturdays). My church had a pancake breakfast on Sunday though, and I figured it’d be a good time to hang out with them. It’d also force me to wake up early (out of the house by 8 a.m. on a Sunday morning is pretty remarkable for me) and I’d get amazing food, so there you go. :O

Buckwheat pancakes with blueberries + almonds, waffles with strawberries + almonds, fake-bacon strips, scrambled tofu, fried potatoes & a sausage patty. <3

We played Chinese Poker/Deuces/Big 2/Thirteen again the other night (my friend’s boyfriend lost again, so we now get 2 free dinners; life is wonderful). They were coming back from Roanoke though and Kosina was worried that I’d get too hungry, since I hadn’t planned on staying out so late, so she told me to come over and made me noodles! <3
