Quinoa Black Bean Omelet

I made a crap ton of quinoa & black beans, so it was thrown into this good ol’ omelet. Or what should’ve been an omelet. This turned more into scrambled eggs because there was some trouble with the flippy part. ._. The turkey sausage patties are there because they were on sale (99 cents for a box of 6 [or was it 8?]! <3 ).

Quinoa Black Bean Omelet

Ingredients:
-eggs
-soy milk
-pepper
-butter or EVOO
-quinoa & black beans
-cilantro

Instructions:
1) Beat eggs in a bowl. Add soy milk, and whisk it around some more. Season to taste with pepper and whisk it around some more. Pour the mixture eggs onto the oiled or buttered pan and let cook for a minute or so.
2) When the bottom of the egg has started to set and starts resembling a giant yellow pancake, gently flip it over and let cook for another couple until there’s no more uncooked egg.
3) Throw in the quinoa & black bean mixture and fold the egg pancake across and over. Transfer to a plate and garnish with cilantro.
